Biederhoff pancakes < eyesonthetruth >

I tried the recipe today. It was indeed very light, almost a cake like consistency. I didn’t use blueberries.

1/4 cup sugar, granulated
1/2 tsp salt
2 cups All purpose flour
2-1/4 tsp Baking powder
1/2 tsp Baking soda
2 Eggs
2 cups Buttermilk
1/4 cup Butter, unsalted, melted

My usual recipe is:

1.5 cups AP flour
2 TBLSP sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp pink salt
Blend

3 TBLSP melted butter
14 oz buttermilk 3% fat
2 eggs
1.5 tsp vanilla extract
.5 tsp lemon extract
Whisk together, gently blend with dry ingredients.

Butter non stick griddle, pour almost 1/2 cup batter. Cook 5 Minutes, then flip.
Done at about 7 minutes total.

Me using 1/2 cup less flour, seems very similar in proportions except sugar which is double for only 1/2 cup more flour.

Seems my results should be similar. I usually eat one of the 6” pancakes right away then freeze the rest for later. I wonder if the freezing is the biggest change? I thoroughly wrap and put in plastic bin.
