You know, just when you think you couldn't improve on something as timeless as the cookie, now they've got cookie cups!
This isn't just a thicker cookie, no...this is much more exciting than that!
What this is is a cookie - like chocolate chip or snickerdoodle or oatmeal (with no fucking raisins!) - that gets pressed into something like a cupcake tin until it forms a cup.
Which is kinda why the name is: "cookie cup".
Then you bake it - but not on its own, you have to stack another cupcake tin on top to make sure that the cookie bakes in the shape of the cup and not puff up like just a fat cookie.
Once you've done that, the cookie should have the shape of a tiny pie crust.
Then the fun begins!
You have a cup, right? Time to fill it!
The ones I've seen mostly are people filling the cookies with some kind of complimentary icing. Like buttercream or peanutbuttercream... See what I did there? The one I just had was a chocolate buttercream which was spectacularly delicious in the chocolate chip cookie cup!
These are not to be taken lightly, they're calorie bombs. It is basically like eating two frosted cookies in one go! You can definitely cut it in half - or quarters, if you're like me - and enjoy it a little at a time.
Someone, well, someone other than me, could be really creative with it and maybe to a chocolate cookie with a peanutbuttercream filling like a Reese's cup. Someone could make a peanut butter cookie and do a layer of strawberry jam on it with some kind of buttercream icing like a version of a PB&J. Someone could knock this out of the park with a snickerdoodle that has a pumpkin filling and a marshmallow creme icing like a pumpkin pie for the holidays!
